The Good Butter Bakery has been working with Chef Gayatri Desai and then eventually with Ground Up, Pune for years now & it’s been one of their most creative partnerships.

A beautiful bun filled with the crumbled smoked tofu. The dough itself utilizes the tangzhong method so the bread is soft, chewy and wonderfully moriesh as is. The filling that Gayatri makes has the tofu cooked with a corn masa miso (made in house at Ground up) along with chillies, ginger and scallion, making the most flavorful salty, sweet & spicy filling with a beautiful umami hit.
