Lime Mascarpone Cheesecake with Fig & Orange Compote
This one gets baked low and slow in a water bath giving it an utterly creamy yet light texture. Addition of Mascarpone makes this cheesecake less dense and the nutty biscuit base complements it perfectly. With a good citrus hit, it begs to be eaten with a pot of coffee alongside. Makes for a fantastic dessert.
