Hazelnut, Belgian Chocolate & Orange Caakie

Texture wise, this cookie sandwich is somewhere between a cookie and a cake. Soft, yet with a bite and chew. It is sort of like a meringue being naturally gluten free but nut based (with almonds & hazelnuts) so it’s incredibly light and just sweet enough so the nuts come through bold and bright. The Belgian dark chocolate filling is perfumed with a hint of orange which perks up the sandwich beautifully.
